Ingredients
- 45g chicken breast
- A handful of spinach
- 10ml fresh orange juice
- Squeeze of lemon juice
- Sprinkle of tapioca chips
- 1 carrot
- Olive oil
- Himalayan salt
- Black pepper
- Microgreens to garnish
Method
- Boil chopped carrots with orange juice for 10 minutes
- Place a pan on medium heat with olive oil and baby spinach for 30 seconds and add a pinch of Himalayan salt and black pepper
- Place the spinach as a base then add the seared chicken on top of it, then add tapioca chips, carrots and microgreens
